06/17/2003: "Orange Curry Paste"
Try this in a chicken based coconut milk Curry:
10 medium-sized dried red chilies, seeded, soaked in warm water and finely chopped 1 teaspoon salt 2 tablespoons of the outer layers of a peeled red onion, chopped 1 tbsp. shrimp paste (kapee) 1 teaspoon rice vinegar
In a mortar, pound the chilies with the salt until they are pulverized add the red onion and continue pounding until it is macerated. Spoon in the shrimp paste and vinegar and pound until the resultant mixture is smooth and uniform.
Makes about what you get in the tin of red, green or yellow curry paste.

No, orange refers to the color of the paste only. I would rather break up the "red or green" question with orange rather than yellow and this stuff isn't in the stores. If you want sweet with orange flavor, think Indian not Thai.
