01/29/2004: "Apple Pancake"
Some pancake houses have Apple Pancakes and some don't. They usually come to the table in an iron skillet, and you can slice and serve as you would lasagne. I had one tonight with some pork sausage, after clearing the snow off the driveway. The apples really "pop" with any kind of pork chop or roast, and the brunch possibilities go without saying. How to:
8 tb Butter (1 stick) 1 c Sugar 1 tb Ground cinnamon 6 Medium apples (some firm type - not Washington State); peeled, -cored, and thinly sliced 6 Eggs 1 c Flour 1 c Milk 1 ts Vanilla Powdered sugar Preheat oven to 425 degrees. In a skillet, melt butter over medium-high heat. Stir in the sugar and cinnamon. Add the apples. Cook, stirring, until apples are translucent, about 15 minutes. Place the pan in the oven while you prepare the batter. Beat the eggs. Add the flour and milk. Beat until smooth. Pour the batter evenly over the apples in the pan. Bake, uncovered, until pancake is puffy and golden, about 20-30 minutes. Sift powdered sugar over the pancake. Cut into wedges. Serve immediately.

Sure, Light Cook, you can fake it. Do the stove top step in whatever you have, and dump the cooked apples and batter into an oven proof dish of some kind. A 9 by 13 oven proof glass dish, the kind you make Lasagne in, would be perfect.
